Let's Pretend It's Shepherd's Pie

  1. Toast bulghur wheat on medium heat in skillet with oil.
  2. Add chopped onion and heat til onion is soft.
  3. Add one cup boiling water and teaspoon of bouillon paste or equivalent cube (I sometimes add a Tbsp of Worcestershire sauce if I have it).
  4. Turn off the heat under the pan and let sit until water is absorbed.
  5. This is your ground meat substitute.
  6. Place bulghur in casserole dish as bottom layer.
  7. Top the bulghur with corn.
  8. Top corn layer with mashed potatoes.
  9. Top mashed potato layer with shredded cheese and bake.
  10. Bake 350F oven for about 45 minutes.
