Not your mommas chicken soup;)
- 2 lb cleaned and denailed chicken feet (don't leave!)
- 1 lb chicken gizzard/heart mix
- 1 onion diced
- 3 clove garlic minced
- 3 tbsp chili powder
- 2 tbsp cumin
- 2 tbsp oregano
- 3 tbsp chicken bouillon (or to taste)
- 1 can stewed tomatoes
- 4 chicken wings
- 3 chicken legs
- 1 lb boneless chicken leg meat cut into cubes
- 2 chayote (or zucchini) cubed
- 2 potatoes cubed
- 1 cup baby carrots
- 2 cup frozen mixed veggies
- 1 corn on cob cut into pieces
- 1/2 cup chopped cilantro
- 1 small head cabbage cut in chunks
- 1 salt and pepper to taste
- 1 cayenne pepper to taste
- throw first 9 ingredients into large stock pot, cover with water, bring to boil, cover and simmer for 25 minutes.
- add chicken wings, chicken legs and leg meat, bring back to boil, cover and simmer for 25 minutes
- add chayote, outdoors, carrots, frozen veggies and corn on cob, bring back to boil, cover and simmer for 20 minutes
- add remaining ingredients, bring to boil, cover and simmer till done, about 15 minutes
- enjoy!
- the feet add something amazing to the broth, I like to add chopped radish and lime juice to my bowl, so yummy!
