Seafood Quiche(Dee-Licious)
- 1 unbaked 9-inch pastry shell
- 1/2 lb. sliced Swiss cheese
- 2 c. half and half
- 1/2 c. shrimp pieces
- 1/4 tsp. nutmeg
- 4 eggs, beaten
- 2 Tbsp. melted butter
- 1 Tbsp. sherry
- 1 c. fresh crab meat
- 1 Tbsp. flour
- salt and pepper
- cayenne pepper
- Cut Swiss cheese into finger-length pieces, 1/4-inch wide. Cover bottom and sides of pastry shell.
- Combine cream, eggs, flour, salt, pepper, nutmeg and cayenne to taste.
- Stir in melted butter and sherry.
- Beat everything together until well blended. Pour about 2/3 of mixture into pastry shell.
- Put crab meat and shrimp into mixture in shell carefully, pushing it down with a fork so that custard mixture covers it well.
- Pour rest of custard mixture into shell (after you have it on oven rack to keep it from spilling).
- Bake in 375u0b0 oven approximately 40 minutes or until browned on top.
- Do let stand at least 20 minutes before serving.
