Portabella's With Nutty Filling
- 1 onion, small and finely diced
- 1 garlic clove, crushed
- 14 red bell pepper, very finely sliced
- 1 teaspoon dried thyme
- 100 g goat cheese, grated (hard)
- 125 g hazelnuts, roughly chopped
- 2 slices white bread, toasted and crumbed
- 1 egg, loosened
- salt and pepper
- 4 portabella mushrooms
- olive oil
- preheat oven to 200 C
- mix onion, garlic, bell pepper, thyme, 75 g goats cheese, hazelnuts and breadcrumbs with the egg and season with salt and pepper.
- Fill the portabella's with the mixture and place them on an ovenproof dish.
- Drizzle a bit of olive oil on the edges and sprinkle the rest of the cheese over the portabella's.
- Bake in the oven for approx 15 minutes until they are golden brown.
