Southwestern Black Beans And Rice
- 1 c. dried black beans
- 3/4 c. sliced carrots
- 3/4 c. sliced celery
- 1/2 c. chopped onions
- 1 (4 oz.) can chopped green chilies
- 1 clove garlic, minced
- 1/8 tsp. crushed red pepper
- black pepper to taste
- 1 c. ham, cooked and diced
- 1/2 c. red bell pepper, diced
- 1/2 c. green bell pepper, diced
- 2 tsp. vegetable oil
- 3 c. hot cooked rice
- Bring 1 quart of water to boil in Dutch oven or large saucepan. Stir in beans and next 7 ingredients.
- Cover and simmer 2 1/2 hours, stirring occasionally.
- Add ham; simmer an additional 15 minutes.
- Cook red and green peppers in oil until tender-crisp. Stir into rice.
- Serve beans with rice.
- Makes 4 servings, only 359 calories per serving and 5 grams of fat.
