Southwestern Black Beans And Rice

  1. Bring 1 quart of water to boil in Dutch oven or large saucepan. Stir in beans and next 7 ingredients.
  2. Cover and simmer 2 1/2 hours, stirring occasionally.
  3. Add ham; simmer an additional 15 minutes.
  4. Cook red and green peppers in oil until tender-crisp. Stir into rice.
  5. Serve beans with rice.
  6. Makes 4 servings, only 359 calories per serving and 5 grams of fat.
