Sloppy Joe Bake
- 1 lb ground beef
- 1 onion, chopped (1 cup)
- 15 12 ounces sloppy joe sandwich sauce
- 11 ounces mexicorn, drained
- 1 cup bisquick baking mix
- 34 cup shredded cheddar cheese
- 1 scallion (optional)
- Preheat oven to 425.
- Coat 1 1/2-quart baking dish with cooking spray.
- In large nonstick skillet, cook beef and onion over medium heat until beef is browned and onion is tender, 5 minutes.
- Drain excess fat.
- Stir in sloppy joe sauce; cook until heated through; remove from heat.
- Reserve 1/3 cup mexicorn; stir remaining into beef mixture; transfer to baking dish.
- Stir baking mix, 1/2 cup cheese and 1/3 cup water into reserved mexicorn; dollop spoonfuls over beef mixture.
- Bake 15-20 minutes or until biscuits are golden, sprinkling with remaining 1/4 cup cheese during last 2 minutes of cooking.
- Cool 10 minutes.
- If desired, sprinkle with 1 scallion, sliced.
