Veggie Enchiladas
- 2 green peppers, chopped
- 2 small onions, chopped
- 6 tablespoons salad oil
- 1 (6 ounce) can tomato sauce
- 1 (15 ounce) can tomatoes
- 2 tablespoons chili powder
- 12 ounces sharp cheddar cheese
- 1 head lettuce
- 1 (12 ounce) package corn tortillas
- heat salad oil.
- add can of tomatoes, green peppers, onions, tomato sauce and heat for 30 minutes.
- add chili powder at the end of heating.
- in small skillet, heat 2 T salad oil.
- heat tortilla long enough to get hot on each side.
- fill with sauce, cheese.
- roll up and add toppings (cheese, lettuce, sour cream, whatever you like).
