Cheddar-Polenta Triangles

  1. Line 13x9-inch pan with parchment paper, with ends of paper extending over sides; spray with cooking spray.
  2. Bring broth to simmer in medium saucepan.
  3. Gradually stir in polenta; cook 5 min.
  4. or until mixture thickens and pulls away from side of pan, stirring frequently.
  5. Stir in Parmesan; spoon into prepared pan.
  6. Smooth top.
  7. Cool to room temperature.
  8. Refrigerate 30 min.
  9. or until firm.
  10. Heat broiler.
  11. Remove polenta from pan.
  12. Cut into 8 pieces; cut each piece diagonally in half.
  13. Place on parchment paper-covered baking sheet; top with cheddar.
  14. Broil 3 to 5 min.
  15. or until Cheddar is melted and polenta is heated through.
  16. Sprinkle with paprika.
