Hearty Thai Soup
- 1 onion, chopped
- 1 chicken breast, thinly sliced
- 1 tablespoon butter
- 12 cup rice
- 1 cup unsweetened soymilk
- 8 shrimp, peeled
- 1 carrot, thinly sliced
- 12 snow peas
- 2 shallots, thinly sliced
- 2 teaspoons chopped ginger
- 1 teaspoon chopped garlic
- 2 12 cups chicken broth
- 2 tablespoons cilantro leaves
- 1 tablespoon finely chopped lemongrass
- salt and pepper
- In a large skillet, brown the onion and chicken in the butter.
- Add the rice and soy milk.
- Season to taste.
- Cover and simmer until the liquid has been absorbed.
- Keep warm.
- In a saucepan, cook the shrimp until pink and firm.
- Add the vegetables, ginger and garlic.
- After a minute of cooking, add the chicken broth.
- In each individual bowls spoon a serving of rice, add cilantro and cover with broth and its garnishes.
