Drunken Chicken

  1. Heat 1/4 cup of the dressing in large skillet on medium heat.
  2. Add chicken; cook until chicken is browned on both sides.
  3. Remove from skillet.
  4. Add the remaining 1/2 cup dressing, the onion, tomatoes, peppers and garlic to skillet; cook until crisp-tender, stirring frequently.
  5. Stir in beer; bring to boil.
  6. Return chicken to skillet.
  7. Reduce heat to medium-low; cover.
  8. Simmer 20 to 25 min.
  9. or until chicken is cooked through.
  10. Serve chicken over the rice; top with vegetable mixture.
