Chocolate Oatmeal Cream Pie Footballs
- 1 cup Butter Flavor Crisco
- 34 cup brown sugar
- 12 cup granulated sugar
- 1 tablespoon molasses
- 1 teaspoon vanilla extract
- 2 eggs
- 1 12 cups flour
- 12 teaspoon salt
- 1 teaspoon baking soda
- 14 teaspoon ground cinnamon
- 14 cup unsweetened cocoa powder
- 1 12 cups quick oats
- 1 tablespoon very hot water
- 1 pinch salt
- 10 ounces marshmallow cream
- 34 cup Butter Flavor Crisco
- 34 cup powdered sugar
- 1 teaspoon vanilla extract
- 4 ounces white chocolate, melted
- FOR COOKIES: In a large bowl, beat Crisco, brown sugar, granulated sugar, molasses, vanilla and eggs.
- Add flour, salt, baking soda, cocoa and cinnamon.
- Mix in the oats.
- Drop by one tablespoon onto a parchment lined cookie sheet (shape into an oval).
- Bake 7-8 minutes in a 350F oven, until just starting to brown around the edges.
- DON'T OVERCOOK!
- Pinch edges of cookies into a football shape if they have rounded too much.
- After cookies have cooled fill and drizzle laces on top with melted white chocolate!
- FOR THE FILLING: Combine hot water and salt and mix until salt is dissolved.
- In large bowl, beat Marshmallow Fluff with Crisco, powdered sugar and vanilla.
- Beat on high until fluffy.
- Add in salt water and mix until well combined.
- Spread filling on one cookie and press second cookie on top.
- FOR THE TOPPING: Using the melted white chocolate, drizzle the top to look like football laces.
- Allow to set about ten minutes.
- Enjoy!
