Heavenly Hash Browns
- 1 (2 lb.) pkg. frozen hash brown potatoes
- 1/4 c. chopped onion (or 1/2 c. according to taste)
- 1 (10 1/2 oz.) can cream of chicken soup or cream of mushroom soup
- 2 c. sour cream (1 pt.)
- 2 c. shredded Cheddar cheese (10 oz. pkg.)
- 1 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. chives or 1 Tbsp. dried (optional)
- 3/4 c. fine dried bread crumbs or 2 c. corn flakes or potato chips, crushed
- 1/2 c. melted butter or margarine
- Separate the thawed potatoes.
- Mix together the onion, soup and sour cream and toss with potatoes.
- Fold in cheese, chives, pepper and salt.
- Mix crumbs and melted butter and spread over mixture.
- Bake, uncovered, in a greased 11 x 7 x 1 1/2-inch or 9 x 13-inch pan for 45 to 60 minutes at 350u0b0 or until done.
