Chicken Cashew Recipe
- 1/2 c. minced onion
- 2 c. chopped celery
- 2 tbsp. butter
- 6 c. diced, cooked chicken
- 1/2 pound salted cashews
- 2 cans cream of mushroom soup
- 1/4 c. chicken broth
- 1 can Chinese noodles
- 1 c. fresh snow peas
- 1 can sliced water chestnuts (optional)
- Saute/fry onion, snow peas and celery in butter.
- Combine onion, snow peas, celery, chicken, cashews, soup and broth; place in casserole dish.
- Store covered in the refrigerator overnight.
- Before baking sprinkle noodles over the top.
- Bake 30 min at 375 degrees.
- Makes 8 servings.
- Nutritional information per serving: 243 calories, 704 milligrams sodium, 13 grams fat; 23 grams carbohydrates.
- Freezes well.
- Note: If you're planning on freezing a portion of this, don't put Chinese noodles on when baking.
- Just serve them at the table.
- I serve this with rice.
