Roquefort Cream Dressing(Aunt Mary'S Recipe)
- 1/3 c. scallions or combination Bermuda onion and chives
- 2 c. mayonnaise
- 2 grated cloves garlic
- 1/2 c. chopped parsley
- 2 Tbsp. anchovy paste
- 1 c. thick sour cream
- 1/2 c. vinegar
- 2 Tbsp. lemon juice
- 1/2 lb. Roquefort or Blue cheese, crumbled
- pepper
- Cut out root ends and chop finely, tops and all, to make scallions.
- Combine mayonnaise, garlic and chopped parsley.
- Add to mixture the anchovy paste.
- Combine and add sour cream and vinegar. Add lemon juice to thin mixture.
- Add Roquefort or Blue cheese, crumbled.
- Season with pepper (no salt; anchovy paste is salty). Chill.
- Will keep for 1 month.
- Use as salad dressing or on crackers or tomato aspic.
