No-Cook No-Sugar Light Strawberry Spread

  1. Rinse clean plastic containers and lids with boiling water.
  2. Dry thoroughly.
  3. Hull and crush strawberries thoroughly, one layer at a time.
  4. Measure exactly 2-1/2 cups prepared strawberries into large bowl.
  5. Stir in lemon juice, low calorie sweetener and pectin crystals.
  6. Let stand 30 min., stirring occasionally.
  7. Fill all containers immediately to within 1/2 inch of tops.
  8. Wipe off top edges of containers; immediately cover with lids.
  9. Let stand at room temperature until set.
  10. (May take up to 24 hours.)
  11. Store in refrigerator up to 1 week or freeze additional containers up to 1 year.
  12. Thaw in refrigerator.
