Ham Corn and Sweet Potato Patties
- 1 large sweet potato
- 1 teaspoon minced garlic
- 2 cups ham, diced
- 23 cup monterey jack pepper cheese, shredded
- 1 cup corn
- 1 large egg
- 3 tablespoons fresh parsley, chopped
- 2 teaspoons olive oil
- Bake sweet potato.
- Spoon out pulp into bowl, breaking up with a fork.
- Stir in garlic, ham, cheese, corn, egg and parsley.
- Shape into 8 (1/2 inch thick) patties.
- In large skillet, heat oil.
- Add patties and cook 5 minutes per side.
