Ham Corn and Sweet Potato Patties

  1. Bake sweet potato.
  2. Spoon out pulp into bowl, breaking up with a fork.
  3. Stir in garlic, ham, cheese, corn, egg and parsley.
  4. Shape into 8 (1/2 inch thick) patties.
  5. In large skillet, heat oil.
  6. Add patties and cook 5 minutes per side.
