Mexican Chorizo Sausage Recipe
- 2 pound lean grnd pork
- 1/4 c. red wine vinegar
- 2 tbsp. chili pwdr
- 2 teaspoon oregano, crushed
- 1 clove chopped garlic
- 1-1/2 teaspoon salt
- 1 tbsp. paprika
- 1/2 teaspoon grnd cumin
- Combine all ingredients in a bowl.
- Work the mix till the seasonings are proportionately distributed.
- Cover tightly and chill for at least 3 hrs.
- When ready to use form into patties or possibly sausage rolls.
- Use as you do commercial chorizo.
- The reason for making chorizo is to control the fat content.
