Mexican Chorizo Sausage Recipe

  1. Combine all ingredients in a bowl.
  2. Work the mix till the seasonings are proportionately distributed.
  3. Cover tightly and chill for at least 3 hrs.
  4. When ready to use form into patties or possibly sausage rolls.
  5. Use as you do commercial chorizo.
  6. The reason for making chorizo is to control the fat content.
