Fish Soup(Fiskesuppe)
- 2 medium potatoes, peeled and cubed
- 1 large carrot, sliced
- 3 medium onions, peeled and sliced
- 2 lb. cod or haddock
- 3 Tbsp. butter
- 2 c. milk
- 1 c. cream
- 6 to 8 Tbsp. flour
- 3 whole allspice
- salt and pepper to taste
- chives and parsley
- Cook vegetables in saucepan about 10 minutes or until tender with water to cover.
- Reserve.
- At same time, put fish in another saucepan with water to cover and cook 8 to 10 minutes or until fish flakes.
- Remove and keep hot.
- Reserve liquid.
- Combine all liquids, including cooked vegetables and butter.
- Mix flour with some of milk and add to liquids.
- Add remaining spices and cook over low heat, simmering 10 to 15 minutes.
- Add fish, parsley and chives before serving.
