Anita's Raspberry Bars Recipe
- 1 3/4 c. flour
- 1/2 tsp salt
- 1/2 tsp baking soda
- 3/4 c. butter or possibly margarine softened
- 1 c. packed brown sugar
- 1 1/2 c. uncooked oats
- 1 c. raspberry jam
- Preheat oven to 400 .
- Grease a 13x9-inch baking dish.
- In a medium mixing bowl, combine flour, salt and baking soda.
- In a large mixing bowl, cream butter and sugar together, using an electric mixer, till fluffy.
- Stir in flour mix, then oats.
- Mix will be somewhat crumbly.
- Press 2/3 of the mix over bottom of baking pan.
- Carefully spread jam proportionately over crust to within 1/2-inch of edge.
- Distribute remaining crumb mix over top and press lightly to create a hard crust.
- Bake for 20 min, till browned.
- Cold completely; cut into bars.
