Swedish Pepparkaka Cookies (A Spice Cookie)
- 1/2 cup butter softened
- 1 1/2 cups sugar
- 1 tablespoon corn syrup, white (karo) dark, or molasses
- 2 teaspoon baking soda
- 1 large eggs beaten
- 3 teaspoons cinnamon
- 2 teaspoon ginger ground
- 1 teaspoon cloves ground
- 3 1/4 cup flour, all-purpose sifted
- 1/2 cup orange juice frozen or fresh
- Cream butter and sugar together.
- ix all ingredients together thoroughly.
- Roll out and cut in desired shapes with cookie cutters.
- Bake on a buttered baking sheet @ 350F (180C) F for about 10 minutes.
- let cool on wire rack.
- Decorate with icing if desired.
- Hints: Put a piece of wax paper over bread board and use a cloth on rolling pin.
- Use flour on paper and then you can roll them out thinner and they will not stick.
- After mixing dough, place in refrigerator until chilled, at least one hour or even overnight.
