Potato Doughnuts
- 1 pkg. active yeast
- 1/4 c. warm water
- 1 c. scalded milk
- 1/4 c. sugar
- 1 tsp. salt
- 3/4 c. mashed or instant potatoes
- 2 eggs, beaten
- 5 to 6 c. plain flour
- 1 lb. confectioners sugar
- Stir
- confectioners sugar, water and vanilla.
- Dissolve yeast in water.
- Combine milk, shortening, sugar and salt into the scalded
- milk.
- Stir in yeast, potato and egg.
- Gradually add flour
- to
- make
- soft
- dough.
- Turn onto floured surface. Knead until
- soft.
- Place
- in greased bowl.
- Turn so that all sides
- are greased.
- Cover.
- Let
- rise for 1 1/2 hours.
- Take out
- and
- roll out to 1/2-inch thick.
- Cut and let dough rise again.
- Then cut doughnuts and drop in 375u0b0 oil.
