Chocolate-Covered Cherry Cookies

  1. In a large bowl, stir together the first 5 ingredients.
  2. In mixer bowl, beat together margarine and sugar on low speed of mixer until fluffy.
  3. Add egg and vanilla; beat well.
  4. Gradually add dry ingredients to creamed mixture; beat until well blended. Shape dough into 1-inch balls; place on ungreased cookie sheet. Press down center of dough with thumb.
  5. Drain cherries, reserving juice.
  6. Place a cherry in the center of each cookie.
  7. In small saucepan, combine chocolate pieces and sweetened condensed milk; heat until the chocolate is melted.
  8. Stir in 4 teaspoons of reserved cherry juice.
  9. Spoon about 1 teaspoon frosting over each cherry.
  10. (Frosting may be thinned with additional cherry juice, if necessary.)
  11. Bake in a 350u0b0 oven about 10 minutes or until done. Remove to wire rack; cool.
  12. Makes 48 cookies.
