Smoked Trout and Goat Cheese Bites

  1. Mix the goat cheese, dill, and lemon zest together and season with salt and pepper.
  2. Spread the tortillas with equal amounts of the cheese mixture.
  3. Arrange the peppers and smoked trout over the cheese.
  4. Roll up each tortilla as tightly as possible.
  5. Wrap each in plastic wrap and refrigerate at least 1 hour, until chilled.
  6. Cut each wrap diagonally into 7 pieces.
  7. Serve chilled.

  10. Substitute 4oz (115g) hot-smoked salmon for the smoked trout.
