Low Sugar Sweet Potato Souffle
- 3 cups sweet potatoes (fresh or canned)
- 4 eggs
- 1 cup Splenda granular
- 1 cup margarine (2 sticks) or 1 cup butter, softened (2 sticks)
- 1 tablespoon vanilla
- 1 cup walnuts, chopped
- 12 cup Splenda brown sugar blend
- 12 cup flour
- Preheat oven to 350F.
- Blend first 3 ingredients, 1 stick of margarine or buttter, and vanilla until smooth.
- Place in casserole dish.
- Blend last 3 ingredients and 1 stick of margarine or butter.
- Put on top of sweet potato mixture.
- Bake at 350F for 30 minutes.
