Vegetarian Spanish Bulgar
- 2 tbsp olive oil
- 4 clove minced garlic
- 1 medium onion chopped
- 1 bell pepper, chopped
- 1 1/4 cup uncooked bulgar
- 1 can diced tomatoes
- 1 can pinto beans, drained & rinsed
- 1 cup water
- 1 tsp paprika
- 1 tsp salt
- 1 dash of black pepper
- 1 dash of cayenne
- Saute the first 5 ingredients until onion and peppers are tender and bulgar is coated with oil.
- Add the remaining ingredients, cover, bring to a boil.
- Then reduce heat and simmer 15-20 minutes or until the liquid is absorbed and bulgar is tender.
