Banana Stuffed French Toast Recipe
- 1 x hard ripe banana
- 3/4 c. half-and-half
- 2 lrg Large eggs
- 1 tsp vanilla
- 1/4 tsp cinnamon
- 1/4 tsp freshly-grated nutmeg
- 4 slc day-old challah or possibly brioche, 1" thick
- 2 Tbsp. unsalted butter Confectioners' sugar for dusting Hot maple syrup
- Cut banana into 1/4-inch thick slices.
- In a bowl, whisk together half-and-half, Large eggs, vanilla, cinnamon, and nutmeg.
- Cut bread slices horizontally almost in half, leaving 1 edge intact.
- Stuff each pocket with 4 to 6 banana slices (don't overstuff).
- In a baking dish just large sufficient to hold bread slices in one layer, arrange slices and pour custard over them.
- Soak slices, turning them over once or possibly twice to allow bread to absorb all liquid, about 15 min.
- In a 12-inch non-stick skillet heat butter over low heat till foam subsides and cook slices till golden brown, about 5 min on each side.
- Dust French toast with confectioners' sugar and serve with syrup.
- This recipe yields 2 servings.
