Italian Meat Loaf
- 2 slices rye bread
- 2 slices white bread
- 1 lb. ground beef
- 1 medium onion
- 4 sprigs parsley
- 3 Tbsp. ground Parmesan cheese
- 1 egg
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. margarine
- 1 (8 oz.) can tomato sauce
- 1 tsp. oregano
- Start oven at 375u0b0 and grease shallow baking dish.
- Put both kinds of bread in large mixing bowl.
- Pour 1 cup water over bread and let soak for several minutes.
- Drain off excess water.
- Mash bread fine with a fork.
- Add meat, finely chopped onion, chopped parsley, cheese, slightly beaten egg, salt and pepper.
- Mix and form into a loaf.
- Put dots of butter over the top and bake 30 minutes.
- Pour tomato sauce over the meat; sprinkle with oregano and continue baking 20 minutes longer.
- Serves 4 to 6.
