Fluffeh Risotto
- 100 g butter
- 3 onions, diced
- 4 potatoes, diced
- 1 red pepper, skinned and diced
- 3 cups rice
- 1 fresh chili pepper, diced
- 4 liters water
- 12 tablespoon paprika
- 1 tablespoon salt
- 2 garlic cloves, minced
- 2 teaspoons turmeric
- 2 tablespoons cumin
- 2 kg chicken breasts, diced
- 300 g cashew nuts
- Melt butter in a maHOOsive saucepan.
- Add onions & red pepper and saute until onions are translucent.
- Add potatoes and stir until well coated in delicious juice.
- Add 2 litres water and spices.
- Boil until potatoes are soft.
- Add other 2 lt. and rice.
- Cook rice until soft, adding more water if necessary.
- Once rice is soft, stir in chicken pieces, cashews and chili and cook until chicken is soft.
