Red Beans And Rice
- 1 lb dried red beans
- 1 meaty ham bone
- 2 qts water
- 3 cups onion, chopped
- 1 cup green onion, chopped
- 1/4 cup tomato sauce
- 2 cloves garlic, minced
- 1 tsp salt
- 1 Tbsp Worchestershire sauce
- 1 tsp pepper
- 1/2 tsp sugar
- 1/4 tsp oregano
- 1/4 tsp thyme
- 1/8 tsp red pepper
- 1/8 tsp hot sauce
- hot cooked rice
- Sort and wash beans; place in a Dutch oven.
- Add ham bone and water; bring to a boil, and boil 3 minutes.
- Remove from heat and let stand 1 hour.
- Return mixture to a boil, cover, reduce heat, and simmer 3 hours.
- Remove ham bone; remove and discard fat and bone.
- Shred meat, and return to bean mixture.
- Stir in onion and next 11 ingredients.
- Bring to a boil; reduce heat, and simmer 1 hour.
- Remove 1/2 cup beans; mash beans and return to Dutch oven, stirring well.
- Serve beans over rice.
- Top each serving with green onions.
- Yield: 10 cups.
