Red Beans And Rice

  1. Sort and wash beans; place in a Dutch oven.
  2. Add ham bone and water; bring to a boil, and boil 3 minutes.
  3. Remove from heat and let stand 1 hour.
  4. Return mixture to a boil, cover, reduce heat, and simmer 3 hours.
  5. Remove ham bone; remove and discard fat and bone.
  6. Shred meat, and return to bean mixture.
  7. Stir in onion and next 11 ingredients.
  8. Bring to a boil; reduce heat, and simmer 1 hour.
  9. Remove 1/2 cup beans; mash beans and return to Dutch oven, stirring well.
  10. Serve beans over rice.
  11. Top each serving with green onions.
  12. Yield: 10 cups.
