Chocolate Muffins
- 1 3/4 cup gluten free all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 2 tbsp cocoa powder
- 6 tbsp stevia
- 1 cup almond or soy milk
- 1/3 cup plus 2 teaspoons grapeseed oil
- 1 egg
- 1 tsp pure vanilla extract
- 3/4 cup semisweet chocolate chips
- Preheat the oven to 400F.
- Put the flour, baking powder, baking soda, cocoa, stevia, and 3/4 cup of the chocolate chips into a large bowl and mix
- Pour all the liquid ingredients into a measuring jug and mix
- Now mix and dry and wet ingredients together
- Spoon into the prepared muffin cases and then bake for 20 minutes or until the muffins are dark, risen and springy.
