Thai Chicken Coleslaw

  1. Poach chicken in a small amount of lightly salted water until cooked.
  2. Cool and shred chicken into fine pieces.
  3. Combine chicken, onion, cabbage, spring onions, capsicum, coriander, and mint in a salad bowl.
  4. Combine dressing with the fish sauce then drizzle over the salad.
  5. Top with roasted peanuts and serve immediately.
