Tortilla Pie
- 1 lb. ground beef
- 1/2 c. chopped onion
- 1/2 c. chopped peppers
- 2 tsp. cumin powder
- 1 tsp. jalapeno peppers
- 1/2 tsp. garlic salt
- 1 1/2 tsp. salt
- 1/8 tsp. pepper
- 1 (1 lb.) can tomatoes
- 1 can pitted ripe olives
- 1/2 c. seedless raisins
- 2 Tbsp. flour
- 6 corn or flour tortillas
- oil
- 1 c. Monterey Jack cheese
- 3 green pepper rings
- hot taco sauce
- In a large skillet, cook beef, onions and green peppers until beef is browned and vegetables are tender.
- Drain off excess fat. Stir in cumin, jalapeno peppers, garlic salt, salt and pepper. Stir in chopped tomatoes with liquid, chopped olives and raisins. Sprinkle flour over mixture; stir until blended.
- Heat to boiling, stirring constantly; boil one minute.
