Chocolate Chip Banana Muffins
- 3/4 c. firmly packed brown sugar
- 1/2 c. butter or margarine, softened
- 1 1/2 c. mashed ripe bananas
- 2 eggs
- 1 tsp. vanilla
- 1 c. all-purpose flour
- 1 c. whole wheat flour
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1/2 c. mini semi-sweet chocolate chips
- Heat oven to 350u0b0. In large mixer bowl, combine sugar and butter. Beat at medium speed, scraping bowl often, until mixture is creamy, 1 to 2 minutes. Add bananas, eggs and vanilla. Continue beating, scraping bowl often, until well mixed, 1 to 2 minutes. In medium bowl, stir together flours, baking soda and salt. Add flour mixture to banana mixture; stir just until moistened. Fold in chocolate chips. Spoon into greased muffin pans. Bake for 18 to 25 minutes or until light golden brown. Cool 5 minutes; remove from pans. Makes 1 1/2 dozen.
