Cherry Date Skillet Cookies

  1. Melt butter in 10-inch skillet; stir in brown sugar and dates.
  2. Remove from heat.
  3. Stir in egg; return to heat.
  4. Cook over medium heat, stirring constantly, 4-6 minutes or until mixture comes to a full boil.
  5. Boil, stirring constantly, 1 minute.
  6. Remove from heat; stir in 1 cup coconut and all remaining ingredients until moistened.
  7. Let stand 10 minutes.
  8. Shape rounded teaspoonfuls into 1-inch balls; roll in remaining coconut.
