BBQ Salmon with Rice

  1. Bring first 4 ingredients to boil in saucepan; cover.
  2. Simmer on medium-low heat 10 min.
  3. Meanwhile, reserve 1 Tbsp.
  4. barbecue sauce for later use.
  5. Brush fish with half the remaining barbecue sauce; place, sauce sides down, in large nonstick skillet; cook on medium-high heat 2 min., turning after 1 min.
  6. and brushing with remaining barbecue sauce.
  7. Remove fish from skillet.
  8. Carefully spoon rice mixture into skillet; top with fish.
  9. Cover; simmer on medium-low heat 10 min.
  10. or until fish flakes with fork and rice is tender.
  11. Brush fish with reserved barbecue sauce.
  12. Remove from heat.
  13. Let stand, covered, 5 min.
