Apple Jicama Salad
- 3 lg. sweet apples, pared, cored, diced
- 1 lg. jicamaa, pared, diced
- 1 tbsp. lemon juice
- 1/2 cup sweet coconut
- 1/2 cup salty peanuts, chopped
- 1/2 cup mayo (light is good!)
- 1/4 cup dried cranberries
- 1/2 tsp. red chili flakes
- 2 tbsp. flax seeds
- In a large serving bowl, combine the diced apples and diced jicama; generously sprinkle with lime juice and toss to coat.
- In a large measure cup, combine coconut, peanuts, mayo, cranberries, red chili flakes and flax seeds until well coated.
- Pour over apples and jicama and toss to coat well.
- Cover and chill until ready to serve, tossing ocassionally.
- Drain well before serving (I serve with a slotted spoon).
