Apple Jicama Salad

  1. In a large serving bowl, combine the diced apples and diced jicama; generously sprinkle with lime juice and toss to coat.
  2. In a large measure cup, combine coconut, peanuts, mayo, cranberries, red chili flakes and flax seeds until well coated.
  3. Pour over apples and jicama and toss to coat well.
  4. Cover and chill until ready to serve, tossing ocassionally.
  5. Drain well before serving (I serve with a slotted spoon).
