Chicken A La King Recipe
- 3 c. cooked chicken
- 2 c. heavy cream
- 1 c. sliced mushrooms
- 1 sliced green pepper
- 1 minced pimento
- 1 1/2 tbsp. flour
- 1/2 c. chicken broth
- 1/2 c. sherry
- 1 teaspoon salt
- 1/4 teaspoon paprika
- 1 dash of cayenne
- 4 egg yolks
- 3 tbsp. butter
- Heat butter in saucepan.
- Add in green peppers, mushrooms and pimentos.
- Simmer 5 min.
- Add in flour and blend well.
- Add in 3/4 of the heavy cream and all the chicken broth.
- Cover and cook over low heat till thickened, stirring constantly.
- Stir in sherry, salt, cayenne and paprika.
- Beat egg yolks and combine with rest of heavy cream.
- Stir slowly into sauce.
- Add in chicken and heat but don't boil.
- Serve on toast or possibly shells.
