Meat Sauce for Noodles

  2. Mix cornstarch and water into a slurry, then mix in the meat, soy sauce, sesame oil, and rice wine.
  3. Mix until everything is combined (in all honesty, I guesstimated on the amounts; mix as you wish).
  4. Let marinate for about 30 minutes.

  6. While the meat is marinating, mince the peppers, ginger, and garlic.
  7. Reduce the peppers if youre not so into the heat.

  9. Saute the peppers, ginger, and garlic in a bit of oil on high.
  10. Add the marinated meat mixture and green onions, break the meat into small pieces while cooking.
  11. When meat is browned, add the dried tofu and cook until heated through, about 2 minutes.

  13. Add the hot bean sauce.
  14. Cook 1 minute.
  15. Season with soy and hot bean sauces to taste.
  16. 5.
  17. Serve over noodles.
  18. Interestingly, Ive found that Asian noodles and Italian pasta differ by little more than shape and size.
