Low Carb Salsa/Lime Chicken
- 3 tablespoons olive oil
- 4 boneless skinless chicken breasts
- 1 cup salsa
- 4 garlic cloves
- 10 tablespoons ranch dressing
- 18 cup lime juice
- 1 12 cups shredded cheddar cheese
- Slice chicken breast in half making 8 thin steaks.
- Brown chicken breasts in olive oil.
- Add garlic.
- Saute for about 2 minutes.
- Mix salsa, ranch dressing and lime juice together.
- Pour over chicken.
- Top with cheese.
- Lower heat to low/medium Cover and simmer until tender (About 15 minutes depending on altitude).
