Seafood Linguini Recipe
- 1/2 pound linguini
- 2 tbsp. vegetable oil
- 3 lg. cloves garlic, finely minced
- 4 tbsp. minced onions
- 4 lg. tomatoes, coarsely minced
- 1/2 teaspoon basil
- 1/4 pound bay scallops
- 1/4 pound med. shrimp (raw)
- 4 scallions, minced
- Salt & pepper
- Prepare linguini according to package directions.
- Heat oil on high heat.
- Add in garlic and onions, cook, stirring about 30 seconds.
- Add in tomatoes and basil; cook, stirring 1 minute.
- Add in seafood and cook, stirring till seafood is warm (shrimp - pink).
- Sprinkle with scallions, season with salt and pepper.
- Spoon over warm linguini.
- Makes 4 servings.
- Calories per serving: 395.
