Stir-Fry Pork And Veggies
- 2 Tbsp. low-sodium soy sauce
- 2 Tbsp. chili sauce
- 1 Tbsp. rice wine vinegar
- 2 tsp. cornstarch
- 1/2 c. chicken broth
- 2 tsp. sugar
- 1/4 tsp. pepper
- 1 lb. boneless pork, cut in bite size pieces
- 2 Tbsp. vegetable oil, divided
- 2 medium onions, cut in wedges
- 1 medium carrot, cut in matchsticks
- 1/2 green pepper, cut in thin strips
- 1 large garlic clove, finely chopped
- 3/4 lb. cabbage coarsely chopped
- Combine the first 7 ingredients and set aside.
- Stir-fry pork in 1 tablespoon oil, browning all sides. Remove pork and add remaining tablespoon of oil.
- Add the next 5 ingredients and stir-fry for 2 minutes.
- Add pork and cook all ingredients 2 more minutes.
- Slowly add the set-aside mixture, stirring until sauce thickens and boils.
- Serve over rice.
