Banana Ice Cream
- 6 large fully ripe bananas
- 1 tablespoon lemon juice
- 34 cup light corn syrup
- 1 teaspoon vanilla
- 1 12 cups whipping cream
- Place the bananas in the freezer for at least 6 hours.
- Remove from the freezer and let thaw for 45 minute Peel bananas and break into pieces.
- Place the banana pieces in a food processor.
- Add lemon juice and process for 15 seconds.
- Add corn syrup and vanilla.
- Turn on processor.
- While processor is running, slowly add the whipping cream and process until smooth.
- Place the mixture in the refrigerator to chill for 30 minute Pour into ice cream maker and freeze as usual.
- Takes about 25 minute to get to soft serve consistency.
- For firmer ice cream, spoon into container, cover, and freeze for 3 hours.
