Melting Lace Cookies
- 1/2 c. butter
- 1 c. quick cooking oats (not instant)
- 1/2 c. firmly packed brown sugar
- 1/3 c. all-purpose flour
- 2 Tbsp. milk
- 1/4 tsp. salt
- 4 sq. (1 oz. each) chocolate
- Preheat oven to 350u0b0.
- Grease two large cookie sheets; set aside.
- In medium saucepan, melt butter.
- Remove from heat.
- Stir in remaining ingredients except chocolate.
- Drop batter by level teaspoon 2 inches apart on cookie sheets.
- Bake only 6 at a time. Bake 7 to 9 minutes or until lightly browned.
- Remove from oven. Let stand 1 minute, then quickly remove to flat surface to cool. Repeat with remaining batter.
- Melt chocolate over hot, not boiling, water.
- With small knife or spatula, spread the back of one cookie with chocolate and sandwich it with a second cookie. Repeat with remaining cookies and chocolate.
- Store in airtight containers or freeze.
- Makes 2 dozen.
- About 100 calories each.
