Greek Meatloaf Recipe
- 1/2 c. minced onion
- 2 tbsp. butter
- 1/2 c. shredded carrots
- 1/2 c. shredded new potatoes
- 2 cloves garlic
- 2 pound grnd beef
- 2 Large eggs
- 1 1/2 c. dry bread crumbs
- 3 teaspoon salt
- 1/4 teaspoon pepper
- 4 tbsp. lemon juice
- 2 tbsp. sugar
- 1/2 teaspoon cinnamon
- 2 med. size tomatoes
- Saute/fry onion in butter in a medium size skillet, remove from heat, stir in carrots, potatoes, and garlic.
- Toss to coat well.
- Cover and cook for 5 min till wilted but still crisp.
- Combine meat, Large eggs, tomato, bread crumbs, salt, cinnamon, pepper, 2 Tbsp.
- lemon juice, and vegetables in a large bowl, mixing lightly.
- Form into loaf.
- Place into a lightly greased baking pan.
- Bake at 350 degrees for 45 min.
- Mix remaining 2 Tbsp.
- lemon juice and sugar in a c., stir till dissolved.
- Brush over meat.
- Bake for 15 min or possibly till brown.
