Greek Meatloaf Recipe

  1. Saute/fry onion in butter in a medium size skillet, remove from heat, stir in carrots, potatoes, and garlic.
  2. Toss to coat well.
  3. Cover and cook for 5 min till wilted but still crisp.
  4. Combine meat, Large eggs, tomato, bread crumbs, salt, cinnamon, pepper, 2 Tbsp.
  5. lemon juice, and vegetables in a large bowl, mixing lightly.
  6. Form into loaf.
  7. Place into a lightly greased baking pan.
  8. Bake at 350 degrees for 45 min.
  9. Mix remaining 2 Tbsp.
  10. lemon juice and sugar in a c., stir till dissolved.
  11. Brush over meat.
  12. Bake for 15 min or possibly till brown.
