Seafood Casserole
- 1/3 c. chopped onion
- 1/4 c. melted margarine
- 1/4 c. all-purpose flour
- 1 tsp. salt
- 1/2 tsp. white pepper
- 1 c. half and half cream
- 1 c. milk
- 1 c. shredded Cheddar cheese
- 2 c. cooked, regular rice
- 2 Tbsp. lemon juice
- 1 (6 oz.) pkg. frozen crab meat, thawed and flaked
- 1 c. cooked, peeled and deveined shrimp
- 1 (5 oz.) can water chestnuts, drained and sliced
- 2 Tbsp. chopped pimiento
- Saute onion in margarine until tender.
- Add flour, salt and pepper.
- Cook until bubbly.
- Gradually add half and half and milk, stirring constantly; cook over low heat until smooth and thickened.
- Remove from
- heat.
- Add remaining ingredients except 1/2 cup of cheese.
- Stir to blend.
- Spoon mixture into a lightly greased 2-quart casserole dish.
- Sprinkle with reserved cheese. Bake at 325u0b0 for 30 minutes.
- Serves 6 to 8.
