Thanksgiving Pumpkin Pie
- 1 pie shell, unbaked (9-inch)
- 2 eggs
- 2 cups cooked pumpkin, smoothly mashed
- 1 teaspoon cinnamon
- 12 teaspoon ginger
- 12 teaspoon nutmeg
- 34 cup brown sugar
- 12 teaspoon salt
- 1 13 cups evaporated milk
- Chill pie shell while preparing filling.
- Beat eggs until foamy.
- Beat in remaining ingredients.
- Pour into pie shell.
- Bake pie in 425F oven for 15 minutes; reduce heat to 350F Bake about 45 minutes longer, or until knife inserted in center, comes out clean.
- Cool before serving.
- Delicious served with whipped cream!
