Butter Tarts - Lemon Butter Tarts

  1. Melt butter in sauce pan.
  2. Add rind, juice and 1-1/2 cups (350 ml) sugar.
  3. Beat eggs and egg yolks til thick and add to lemon butter mixture.
  4. Cook over medium heat stirring constantly.
  5. Chill.
  6. Beat 3 egg whites until stiff.
  7. Gradually add 1/4 cup (60 ml) sugar and beat til stiff and glossy.
  8. Fill shells with custard, and top with meringue.
  9. Bake at 350 degrees (175 C.) just until tarts are a delicate brown.
