Chocolate Bliss Cheesecake
- CRUST
- 1 1/4 cups crushed Mr. Christie's Chocolate Wafers, about 32 wafers
- 1/4 cup margarine, melted
- FILLING
- 1 pkg. (250g) Philadelphia Brick Cream Cheese, softened
- 1/2 cup granulated sugar, divided
- 1 tsp. vanilla
- 1 cup Baker's Semi-Sweet Chocolate Chips
- 2 eggs, separated
- 1 cup whipping cream, whipped
- 13 Mr. Christie's Chocolate Wafers
- CHOCOLATE WHIPPED CREAM
- 1 cup whipping cream, whipped
- 2 Tbsp. cocoa
- 2 Tbsp. icing sugar
- grated chocolate or chocolate curls
- COMBINE wafer crumbs and margarine.
- Press evenly over bottom of 9-inch springform pan.
- BAKE at 350F for 8 minutes.
- Cool.
- BEAT cream cheese, 1/4 cup sugar, and vanilla.
- Melt chocolate chips over hot water.
- Remove from heat.
- Cool slightly.
- Blend egg yolks with melted chocolate into cream cheese mixture blending until smooth.
- BEAT egg whites until frothy; gradually add remaining 1/4 cup sugar and beat until stiff peaks form.
- Blend into chocolate mixture.
- Fold in whipped cream.
- LINE sides of springform pan with about 13 chocolate wafers.
- Pour filling into prepared pan.
- Cover and freeze for 3 hours or until firm.
- Remove from freezer 30 minutes before serving.
- BEAT whipping cream with cocoa and icing sugar until stiff.
- Garnish with chocolate whipped cream and chocolate curls.
