Ground Pork Curry
- 1 tbsp Canola Oil
- 1 large Jalapeno Pepper (sliced in half lengthwise)
- 3 clove Garlic (smashed)
- 1/4 tsp Cumin Seeds
- 1/4 tsp Sesame Seeds
- 2 large Carrots (1/4-inch slices)
- 1 lb Ground Pork
- 2 tbsp Patak's Hot Curry Paste
- 14 oz Thai Kitchen Light Coconut Milk
- 1 tsp Salt
- 1 1/3 cup Frozen Sweet Peas
- In a medium saucepan over medium-low heat, add canola oil, jalapeno, garlic, sesame seeds, and cumin seeds.
- Saute for 10 minutes stirring occasionally to toast seeds and flavor the oil.
- Remove the jalapeno and set aside.
- Increase the heat to medium and add the carrots and ground pork.
- Cook until pork is completely cooked through, then remove as much of residual fat as possible.
- Stir in curry paste, coconut milk, salt, and peas.
- Return jalapeno and simmer entire mixture for 10-15 minutes over medium heat.
- Serve over white rice.
