Golden Raisin Buns
- 1 c. water
- 1/2 c. butter or margarine
- 1 tsp. sugar
- 1/4 tsp. salt
- 1 c. flour
- 4 eggs
- 1/2 c. golden raisins, plumped
- Lemon Frosting (see below)
- Combine water, butter, sugar and salt in a saucepan; bring to a boil.
- Add flour all at once, then over low heat, beat with a wooden spoon about 1 minute or until mixture leaves sides of pan and forms a smooth, thick dough.
- (Yes, this uses only 1 teaspoon of sugar!)
- Remove from heat.
- Continue beating about 2 minutes to cool slightly.
- Add eggs, one at a time, beating after each until mixture has a satiny sheen.
- Stir in raisins.
- Drop heaping measuring tablespoonfuls about 2 inches apart on greased baking sheets.
- Bake 30 to 35 minutes or until golden, firm and doubled, at 375u0b0.
- Remove to wire rack to cool slightly.
- While still warm, gently spread frosting over tops and sides.
- Makes 20.
- (Do not overbake!)
